Ingredients
4 Slices- Thick cut Double Hickory Smoked Bacon, diced
2 cups- onions, peeled & chopped
2- Eggs
1 Cup- Sour Cream
Pinch of Flour
½ Teaspoon- Kosher Salt
½ Teaspoon- Fresh ground pepper
1- unbaked 9” pie shell
Directions
Preheat oven to 400° Sauté bacon and drain away any excess fat, remove bacon from pan. In the same pan, add your onions and sauté briefly until they are clear, do not brown. Combine onions and bacon. In a separate dish, beat the eggs and combine with sour cream. Sprinkle flour over this egg and sour cream mixture and slowly fold it in, do not beat. Add salt and pepper.
Place your 9” pie shell in a pie pan and poke holes in the bottom with a fork. Spread the onions and bacon along the bottom of shell. Pour sour cream mixture over top. Bake your pie for 15 minutes. After 15 minutes, reduce heat to 350° and cook for another 15 minutes or until golden brown.
